Bugfix/involved authority pdf

!545 (merged) introduced a bug when the creator of an assignment doesn't have a creator, for some reason the test only fails sometimes (couldn't figure out why)

Also applies the change from the previous MR for assignment logs ("Archivierte Begleitungen" on volunteers#show), and fixes the policy checks (in both cases we need to either display a link, or just the name)
